Takes a few seconds...maybe 10, but reads accurately. I tested it with boiling water. Even used it on grilled hamburgers. Worked fine when you stab it from the edge, rather than the center. Gauge is pretty small, but legible. Pocket sleeve is handy.Customer Review: Cheaper at the hardware store

Pros: Inexpensive, displays high temperatures ( > 200 degrees), convenient pocket holder
Cons: Temperature reading not as fast as I was expecting, but still reasonable at 20 to 30 seconds - not what I would call "instant".
