I had been making fudge and doing the water method to determine if it was in the soft stage and let me tell you. This thermometer is the way to go. No guessing. When it reaches 240 degrees which it is also mark 'soft stage', I know it's time to remove from the heat. It has all kinds of markings on it next to the degree markings. Extremely helpful. I like the idea that it has an adjustable clamp on it to fit any depth size pan. The glass tip of the thermometer is about 1/2" higher than the metal framing to prevent the tip from touching the bottom of the pan. This is a pretty big thermometer. Approx. 8" high. Very sturdy and good quality made. You can see why some people have had these for years and years. Highly recommend this.

I have been using this for quite a while for candy making. Although some of the writing has washed off, I can still read the indentations and so continue to use it. Of all of the thermometers I own (and I have several), it is the most accurate. Candy thermometers should always be tested before each use by putting them in boiling water and adjusting your final temperature by any +- they show from true 212F or 100C boiling temp. This one has never needed any adjustments; others have been off 6 to 8 degrees. Because of this, its strength (no exposed glass bulb to break) and its ease in cleaning(dishwasher-proof), this is the only candy thermomoter I recommend when teaching candy making.

I love how protected the glass dial is on this thermometer. The "stay cool" handle on the top is great, as is the height of the thermometer. Some of the less expensive thermometers are hard to use in deep stock pots because they don't reach the liquid. The adjustable clip for attaching the thermometer to the side of a pot slides very easily. There is metal section on the bottom of this thermometer that acts as a barrier between the bottom of your pot and the glass temperature dial; this is great because it can sometimes be hard to see how close you are to the bottom of your bot.

I don't make candy but can see how you would need this thermometer for that too. For deep frying, a thermometer is essential. This thermometer is well made and is a necessity for deep frying. I have a 15K BTU burner on my stove and even with that i'm surprised how much the oil temperature drops when food is added. This helps to maintain a temperature suitable for deep fat frying (350 to 375 degrees F). Any hotter, the oil smokes and any cooler the food absorbs oil and gets mushy. The clip on the back of the thermometer adjusts nicely to almost any size pot.

i received this as a gift for my birthday and read the reviews. with all the negative ones i was worried. but i have used it many times now for small batch but high temperature candy making and frying. none of the numbers have come off, and the temperature is precise. i rinse it off right away though, and wipe it dry with a towel. but if you only use it for small batch things, then the numbers shouldnt come off anyway since liquid and the like will never even touch the numbers during cooking. i like this thermometer. the clip is strong and remains stable.
